Magnificent 7 Pasta Salad



The magnificent 7 around here are my kids, so it is named for them since they helped 'figure out' what was the best combination, and also because it has 7 colors in it. This has enough diversity that it is a complete meal. I buy everything organic when I can, but I can't always find it, and 'regular' is still better than the boxed instant pasta salad by far!

You will need:
1 bag pre-washed spinach
1 lb. uncooked whole wheat pasta (I use penne or spirals)
1/2 bottle light Italian dressing
1 can small black olives
1 can garbanzo beans
1 pouch turkey pepperoni
3 baby cucumbers, sliced
4 large plum tomatoes, quartered and sliced
1 bag shredded cheddar cheese (we use Veggie Shredds)
1 purple onion, halved and sliced thin (semi-circles)

Put water on to boil for pasta. Meanwhile, mix spinach, olives, tomatoes, beans, pepperoni, cucumbers, and onion in large bowl. Toss with dressing and allow to 'marinate'. Cook pasta to desired doneness. Drain well, rinse with cold water, and drain again thoroughly. Add to salad bowl along with cheese, tossing well.

Then some of the kids like to add their own toppings, including banana peppers, thawed peas, Parmesan cheese, and croutons. I like to serve it with Red Hot Blues for something crunchy.
