Making it from Scratch Monday

Baked Oatmeal
6 cups thick rolled oats
1/2 cup flax seeds
1/2 cup butter (we use Earth Balance)
1/4 cup maple syrup
nuts (optional)

Place in a 9 X 12 pan and mix well. Add water to cover. Let sit overnight at room temperature (I usually let it sit in the oven). Add milk or yogurt just before baking. Bake at 300* for 1 hour. Serve with hot tea.

Variations: just add whatever you're in the mood for
coconut milk and shredded coconut
diced apples and cinnamon
raisins and cinnamon
canned pumpkin and nutmeg
blueberries and vanilla
almonds, raisins, and chocolate chips (granola bar)

That sounds really good and conforting. I love Earth Balance too, but I can't get it at my local grocery store anymore. Or at least I can't get it at the grocery store that is closet to my house. Do you think this cold be made in a crock pot over night?

I don't see why not!

I used to hate to make oatmeal because I either burned the bottom waiting for it to cook in a pot, or had to stir and microwave several times in small batches. This requires no effort in the morning and that is the time I need that benefit most!

We get our Earth Balance through the co-op. I order a case about every other month. If you're interested in that, Frankferd Farms sells it by the tub or case and will ship it to you. I don't know how I would do it if I didn't have wholsesale, case lot pricing! I've just switched everyone to it because it is easier and there is no worry about someone getting the wrong piece of toast.
